preparation

1.  Heat oil in a large skillet. Add zucchini, onion, parsley, garlic, salt, pepper, oregano.

2.  Saute mixture over medium heat, stirring often for 20 minutes.

3.  Toss in tomatoes and continue to saute for 5 minutes.

4.  Place in a dish and sprinkle with parmesan cheese.
