Yummy Zucchini Brownies

Have you ever tried to make a healthier brownie using black beans? I have and I am always disappointed with the results which are usually too dense for my preference. These zucchini brownies are the opposite...they are incredibly moist and a real crowd pleaser even though they are a healthier alternative to the regular brownie. Plus they are gluten and grain free!

2 cup Shredded/chopped Zucchini

1 cup Almond Butter

1/3 cup raw honey

1 egg

1 tsp vanilla extract

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1 c Dark Chocolate Chips

2.  Grease a 9x9" casserole dish

3.  Throw all ingredients in a food processor and blend until smooth

4.  Spread into prepared casserole dish and bake for 35-45 minutes

5.  Let cool, cut into squares and enjoy!
