This loaf a very basic white bread made using the straight dough method, uses a relatively large amount of yeast to get it to rise quickly. If you want a slower rise and more flavorful bread, use less yeast and/or refrigerate the dough for part of the rise. Makes: 1 8-cup loaf, 2 baguettes, 1 boule, 1 bâtard or 10 rolls
