Vanilla Ice cream

A very simple Vanilla Ice cream made of Vanilla beans, eggs & heavy cream.

2 cups heavy whipping cream

3 egg yolks

1/2 tin Condensed Milk

1/4 Tspn salt

1 tbsp Vanilla Bean or 2 Vanilla essence

2 tbsp sugar

1 cup milk

1.  In a medium saucepan, combine milk, sugar & Vanilla bean over medium heat, and bring to a simmer.

2.  Meanwhile, in a medium bowl, whisk egg yolks until well combined.

3.  While whisking egg mixture constantly, slowly add 1/4 cup of the heated milk to the egg mixture.

4.  Strain this mixture into milk remaining in saucepan.

5.  Continue cooking over medium heat, whisking constantly, until mixture comes to a full boil, 4 to 6 minutes.

6.  Now set this aside to cool or put it in the refrigerator.

7.  In a mixing bowl whip the cream to soft peaks.

8.  Combine Milkmaid / Condensed milk into the whipped cream & continue to whip it until well combined.

9.  Finally combine the cooled custard to this mixture & mix well.

10.  Freeze this for 2 hours, remove & whip it again with the electric beater for 2 minutes. Continue this process 2 times after every 2 hours.

11.  Now let this ice cream set in the freezer for at least 6 to 8 hours or until set completely.

Cooks' note:
You need to be patient coz ice cream takes atleast 6 to 8 hours to set completely
