Pan drippings from roasted turkey

2 tbsp to 1/4 cup melted butter

1/4 cup all purpose flour

1.  Stir 1 cup broth into the pan drippings from roasted turkey in a roasting pan and stir. Pour the drippings into a measuring cup. Skim and reserve fat.

2.  Add enough melted butter if necessary to the reserved fat to make 1/4 cup.

3.  Add enough broth to the drippings to measure 2 cups of total liquid.

4.  Pour the 1/4 cup fat into a saucepan and stir in flour.

5.  Add broth mixture to flour mixture in saucepan and stir.

6.  Cook and stir over medium heat until bubbly.

7.  Season to taste with salt and pepper.
