Spiral-Patterned Sablée Cookies

To make these elegant cookies, roll out a sheet of chocolate sablée dough and press it onto a sheet of plain extra buttery sweet dough. Then roll the whole thing up and slice it. The spiral cookies combine the flavors of chocolate and butter.

1 recipe chocolate sablée dough

Confectioners' sugar (for rolling)

Cocoa powder (for rolling)

1 egg white (lightly beaten)

1.  Roll out a rectangle of extra buttery sweet pastry dough and brush it with egg white. Roll out a rectangle of chocolate sablée and set it on top ofthe sheet of plain sablée.

2.  Trim the edges of the two-layered rectangle.

3.  Brush the chocolate rectangle with egg white.

4.  Pinch along one long side of the rectangle...

5.  ...roll it up.

6.  Pinch the edge of the cylinder against the rest of the roll so it doesn't unroll when baking.

7.  Slice the roll into 1/3-inch-thick cookies. Bake until barely brown.
