Spicy Vegetarian Chopsuey

Spicy Vegetarian Chopsuey is cooked in Indo-Chinese style that contains vegetables in sauces and crispy fried noodles. There are different variations to this recipe. If you are a non-vegetarian you can serve fried-egg on top of it. This is one of my favorite as its tasty, spicy and love the crispy noodles when mixed with the sauce. It is truly amazing.

250 g Crispy Chopsuey Noodles

150 g Cooked Noodles

Coriander leaves/Spring onions to garnish

2 tbsp Vegetable Oil

2 tbsp All Purpose flour or corn flour

2 cups Water around

Salt to taste

(All vegetables chopped lengthwise)

1 cup Cabbage

1 Capsicum

1 Onion

1 Carrot

4 oz Mushrooms

3 Green chillies

1 inch Ginger grated

5 cloves Garlic

1/4 cup Green peas

Sauces/Spices used

8 oz Tomato sauce

1/4 cup Sriracha chilli sauce

1 tsp Soya sauce

2 tsp Worcestershire sauce

1 tsp Apple cider Vinegar or lemon juice

1/2 tsp (optional) Black Pepper powder

1 tsp (optional) Red Chilli powder

1/4 tsp Sugar

1.  Heat Oil in Pan. add the garlic cloves and saute for minute. Now add all the ingredients mentioned above in Sauces/spices and mix well.

2.  In bowl add corn flour,water and mix well so that there are no lumps. add this flour mixture to the sauce and stir them till the gravy thickens. turn off the flame.

3.  Heat oil in another pan. add onion, green chillis, ginger and saute till it becomes light in color. now add all the other vegetables and cook for 2 minutes.

4.  Now add the cooked noodles, sauce prepared to it, mix well and switch off the flame.

5.  For the fried Noodles: If you do not have store bought noodles,You can always cook the noodles 70-80% drain then and then fry it.

6.  On serving plate, add the crispy fried noodles, pour the vegetable sauce on top of it. garnish it with coriander leaves.

7.  Spicy Vegetarian Chopsuey is now ready.Serve hot and enjoy.
