Spiced Crawfish

2 quarts red wine

1 quart water

3 leaves bay

4 cloves garlic

1/4 cup Tabasco

2 T salt

3 sprigs parsley

6-8 whole allspice

1 t tarragon

6-8 dozen crawfish

1.  Bring the wine, water, bay leaves, garlic, Tabasco, salt, parsley, allspice and tarragon to a boil in a deep pan.

2.  Lower the heat and simmer 10 minutes.

3.  Add the crawfish and cook 8-10 minutes until just done but not mushy.

4.  Drain, allow 12-16 minutes per person and served chilled.

Cooks' note:
Provide small picks to extract the meat. Best eaten without any sauce. Add a bowl of French dressing or mayonnaise for dunking.
