Greek Spinach Pie aka Spanakopita. Delicious!

2 pounds fresh spinach rinsed and patted dry

1 bunch chopped scallions, white and green parts

1/4 cup chopped parsley

1 dash salt

1 dash black pepper

1/2 pound feta cheese, crumbled

2 eggs, lightly beaten

1 cup unsalted butter, melted

1 pound sheets phyllo dough

1.   Heat 1 tablespoon of the oil in a large saute pan, add half of the spinach and saute until spinach wilts, about 2 minutes.

2.  Remove spinach and squeeze out excess liquid, then chop roughly. Repeat with remaining spinach, using 1 more tablespoon of olive oil.

3.  Pour off any liquid from the pan, and add remaining olive oil.

4.  Add scallions and saute until soft, about 2 to 3 minutes.

5.  Add the spinach to the scallions, along with the parsley, salt and pepper. Cook over low heat for 1 to 2 minutes, then remove from heat to cool.

6.  Stir the feta and as much beaten egg to moisten the cooled spinach mixture.

7.  Preheat the oven to 350 degrees F. Brush a baking sheet with some of the melted butter.

8.  Unroll the filo dough on a flat surface and keep it covered with waxed paper and a damp towel so it doesn't dry out and become brittle. Use a pastry brush to brush a strip of filo with melted butter. Place the file in the baking pan. Repeat with another filo right on top of the first and add butter. Put 3 layers of filo.

9.  Add spinach mixture all over the pan.

10.  Add another layer of filo and brush it with butter. Repeat this with 2 more layers of filo.

11.  Cut the pie into squares and place it in the oven.

12.  Bake for 30 to 35 minutes, or until golden and crisp.
