2 1lb boiled chicken lobsters

1 cup tomato sauce

1/4lb fresh mushrooms

2 tablespoons butter

1/4 teaspoon tarragon

2 tablespoons brandy

2 tablespoons parsley, finely minced

1.  Wash and cut the mushrooms into thin slices.

2.  Saute the mushrooms in the butter until tender.

3.  Remove the meat from the lobster.

4.  Cut lobster meat into 1/2 inch dice.

5.  Combine the tomato sauce, lobster meat, mushrooms, tarragon, brandy and parsley.

6.  Simmer slowly about 5 minutes.

7.  Prepare the spaghettini, following the directions on the package.

8.  Pour lobster sauce over spaghettini on dinner plates.

9.  Pass parmesan cheese at table.
