preparation

1.  In a mixing bowl, beat the butter on high for 30 seconds, with an electric mixer.

2.  Beat in the sugar, egg, vanilla, baking soda and cream of tartar and salt; beat until thoroughly combined.

3.  Mix in the flour, using a wooden spoon in conjunction with the electric mixer—this makes the dough come together quickly and easily.

4.  Cover and chill the dough for 1 hour.

5.  Preheat the oven to 375°.

6.  Combine the sugar and cinnamon in a small, shallow bowl.

7.  Shape the dough into 1 inch balls.

8.  Roll balls in the cinnamon/sugar mixture.

9.  Place balls onto an ungreased cookie sheet.

10.  Bake at 375° for 10-11 minutes, or until edges are golden brown.

11.  Cool cookies on cooling racks.
