Smothered Chicken

Summer.......full of fun get togethers and cookouts, but lots of food that's not so good for you. Since we've eaten more than our share of carbs this past weekend we thought we'd slow it down and have a few low carb meals this week. This was a good one. It was easy to make and delicious. Also extremely filling and good for leftovers.

4 boneless skinless chicken breast

5 cloves of garlic (or to taste)

3 tbs of olive oil

2 green bell peppers

2 sweet onions

2 cups of cheddar cheese

Salt and pepper to taste

1.  Cut up the peppers and onions and cook them until soft, set aside. Brown the chicken in the olive oil and garlic.Transfer to 350 degree oven and cook until done. Add the peppers and onions on top of the chicken and top with cheese. Place it back in the oven until the cheese is melted.
