Slow Cooker Lemon Chicken with Broccoli

This slow cooker lemon chicken recipe is seriously the best chicken dish you will ever make. I struggle to find healthy recipes that I actually crave. This chicken is so tangy and tender. I have made it 3 times in the last 2 weeks! It is easy to clean up, since you shake the chicken with the seasonings in a ziplock bag. You add your favorite veggie on top of the chicken during the last hour of cooking. Serve with rice if you would like, or just with the veggies, for a sort of low carb meal.

1 pounds to 1 1/2 boneless chicken breasts- The chicken I bought was thinly sliced It works really well in this recipe If you can't find it, get chicken tenderloins.

1 package dry zesty italian salad dressing mix packet (0.6 ounces)

1 tablespoon all-purpose flour

1 large ziplock bag

1 tablespoon cooking oil

3 large lemons juiced, pick seeds out (should yield 1 cup of juice)

2 broccoli crowns cut up (you could sub asparagus or fresh green beans here)

1.  Put dressing packet and flour in the ziplock bag. Add the chicken to the bag, and shake to coat the chicken.

2.  Brown chicken in a skillet with cooking oil, do this in batches if you need to. Just brown the chicken, don't worry about cooking it all the way.

3.  Put the lemon juice in the bottom of the slow cooker.

4.  Add Chicken. DO NOT add the broccoli yet.

5.  Cook on high for 2 hours, then add the broccoli.

6.  Cook for 1 more hour or until broccoli is tender. Make sure to drizzle lemon sauce from bottom of slow cooker onto the chicken when serving. Enjoy as is, or serve with rice.
