Slow Cooker Lasagna

Lighter version of lasagna using ground beef. Delicious!

1 lb ground turkey

1 bell pepper, chopped

1 onion, chopped

1 jar (26 oz) pasta sauce

4 cups shredded cheese (any type you prefer)

jar 15-oz of ricotta cheese

1 tbsp Italian seasoning

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp pepper

1 box lasagna noodles (will not use the full box)

2 tablespoons Parmesan cheese

1.  Cook ground turkey in a skillet with pepper and onion until the meat is no longer pink.

2.  Stir in the pasta sauce and heat through.

3.  In a large bowl mix ricotta cheese and shredded cheese. Add Italian seasoning, garlic powder, salt and pepper and mix well.

4.  Place lasagna noodles on the bottom of the slow cooker. Cover with 1/3 of the meat mixture, followed by 1/3 of the cheese mixture. Repeat twice. You may finish with noodles on top, sprinkling them with Parmesan cheese at the end of the cooking process, or leave the cheese mixture on top.

5.  Cover and cook on low for 4-5 hours. Let stand 10 minutes before cutting.
