Sauteed Swiss Chard and Pomegranate Seeds

I often eat sauteed leafy greens simply with sauteed onions and a bit of salt, but when I saw that my supermarket had pomegranates in I thought it would be a great, simple way to brighten it up. It works great as an appetizer, side dish, even had it as my dinner. It would probably be great served over some pasta, but it's also delicious all by itself. The prep work is a little time consuming, but the cooking couldn't be easier.

1 bunch any Swiss Chard (I used Rainbow)

1/2 cup pomegranate seeds

1/2 cup chopped onion

2 tbsp olive oil

preparation

1.  Prepare a large, deep saute pan or pot with the olive oil

2.  De-seed and clean the pomegranate. Use 1/2 cup of the seeds for the recipe and save the rest for another recipe or to snack on later.

3.  Remove the large center vein and any thicker veins from the chard. Slice it into strips about an inch thick.

4.  Heat the olive oil over medium heat. Once hot, saute the onions until just before done.

5.  Put in the chard 1/3 of the batch at a time (or however much your pot is able to accommodate. It takes up a lot of volume while raw but cooks down quickly).

6.  Once halfway done, when it is slightly wilted but still lighter green, add another 1/3 of the chard. Do so again for the final third. When chard is uniform wilted, but still has a bit of a bite to it, it is done. Season it with salt to taste.

7.  Turn off the heat. Stir in the pomegranate seeds.

8.  Move to a serving dish and enjoy immediately.

Cooks' note:
I used a small pomegranate, about 2 1/2-3 inches in diameter and I used about 2/3 of it. The other third was the perfect amount with some chocolate for dessert!
It also would probably make a great novelty Christmas dish. The red pomegranate seeds stand out almost like Christmas lights against the dark green chard.

A bunch of Swiss Chard is about 11 ounces.
