1 cup pine nuts

1 cup raisins

8 cloves garlic, sliced

2 pounds fresh baby spinach

1 tsp shredded lemon peel

3 tbsp lemon juice

1/2 tsp salt

1/2 tsp ground black pepper

preparation

1.  In a large skillet heat 1 tbsp of the oil in medium heat. Add pine nuts, cook and stir for 5 minutes and put them in a bowl.

2.  Add 1 tbsp of the oil to the skillet and heat over medium heat. Add 1/3 of the raisins, 1/3 of garlic, and 1/3 of spinach. Cook for 2 minutes, place them in a bowl and repeat the same process for two more times.

3.  Add lemon peel, lemon juice, salt and pepper to the spinach mixture and toss gently.
