preparation

1.  To keep the tail from curling, slide a skewer between the membrane and the flesh along the bottom of the tail.

2.  Heat oil in a pan over high heat and put in the lobster parts. Turn them around until they start to turn red.

3.  Cover the pan and let the lobster steam over medium heat.

4.  When the lobster is red, take it out and add chopped onion, carrot, and celery to the pan. Cook over medium heat until the vegetables begin to brown.

5.  It the lobster needs more cooking, put it in the pan with the vegetables. Add liquid such as wine, cover, and cook for 5 minutes.
