
Salmon amaranth burger with radish slaw

This is a simple, no fuss recipe, ideal for a hot day (such as today, at long last!), when you would probably prefer to spend more time in the garden than in the kitchen. Dont be tempted to grill these burgers, however, as they are very low in fat and are likely to get a bit dry on the grill. Better to coat them lightly in breadcrumbs and fry in a little oil. 3/4 teaspoon fine sea salt, plus plenty of black pepper
2 tablespoons olive oil for the slaw, plus a little more for frying
250 g radish, grated, sliced or spiralized
1 tablespoon dill, finely chopped
2 tablespoons lemon juice
