Saffron Flavored Pulao

Aromatic tasty pulao with the essence of saffron milk and nuts. Serve with any spicy meat gravy for any party.

1 cup Basmati rice

pinch saffron

1/4 cup warm milk

2 cup water

2 tsp ghee

1/2 tsp caraway seeds

1 stick cinnamon

salt to taste

1 tsp cashew

1 tsp raisins

1 tsp almonds

onion, finely chopped

1/4 tsp sugar

1.  Soak saffron in milk for a while.Clean rice and keep ready.

2.  Heat 2 tsp ghee in a pan , fry cashew, chopped almonds and raisins one by one. Then add sugar to it and fry onion till it becomes deep brown. Keep aside it.

3.  Heat remaining 2 tsp ghee in a thick bottomed pan , add in caraway seeds and cinnamon stick. Saute for few seconds. Then add in water , saffron milk and salt. Wait for to boil.

4.  When it starts to boil add the drained rice to it. Cover and cook till done. When done fluff it up with a fork.

5.  Mix the fried nuts and onions to it.

7.  Serve with any spicy gravy.
