Russian Beet Root Salad

This Russian beet salad is called Vinegret. It has a fantastic, unique flavor, which everyone loves.

1 beet

3-4 potatoes

2 large carrots

2 dills, chopped

1/2 onion, chopped

3/4 cup sauerkraut

olive oil to toss

salt and pepper to taste

1.  Boil beet, potatoes and carrots with skin on until soft (10 to 15 minutes for potatoes and carrots, 15-20 minutes for the beet). Take them out of the water, cool and peel the skin. Chop.

2.  Add chopped beets to a large bowl and toss with olive oil.

3.  Add chopped onion, dill, sauerkraut and a bit more oil and mix well. Add salt and pepper to taste. Chill in the refrigerator before serving.
