Rooibos raspberry ice lollies

This recipe is incredibly easy to make and uses seasonal fruit. It does not contain any refined sugar so the ice lollies are refreshing, low in calories and you don’t have to stop at one. I asked my son (who has a seriously sweet tooth) if they were sweet enough and the answer was ‘they are just right’. So I know they are. The coconut milk makes the texture silky smooth without affecting the taste very much.

1/2 cup rooibos tea (made using 2 tea bags)

1 cup raspberries

100 g coconut milk

1.5 tablespoons honey

1.  Using 2 rooibos tea bags fill 1/2 cup with boiling water. Leave to stand until the tea has cooled, then remove the tea bags. Puree all the ingredients, pour into ice lolly molds and freeze for 3-4 hours.
