Roasted Pear Vanilla Bisque

I love roasting vegetables! The natural sweetness of the veggies intensify…I then wondered, “What if I roasted fruit…how would that work?” Well, not all fruit works, but one of the most delicious fruits roasted are pears…their flavor intensifies & deepens, & the pears retain their shape, which is great. Roasting pears, led to this soup…sweet, velvety, rich. Vanilla & pear are a wonderful pairing. Serve this soup with anything…even as dessert!

5-6 ripe but firm pears

1 teaspoon vanilla extract

1/2 teaspoon freshly ground pepper

cup ¾-1 heavy cream

1.  Preheat your oven to 300˚.

2.  Cut the pears into quarters, then remove the core from each quarter. Place the pear quarters on an aluminum foil-lined rimmed baking sheet. Roast the pears until lightly caramelized, about 45 minutes. Remove from your oven & allow to cool for a few minutes.

3.  Transfer the roasted pears to a blender or food processor, add the vanilla & pepper, & blend/purée until smooth. Add the heavy cream & blend until completely blended & smooth.

4.  Pour the bisque into a heavy sauce pan & heat until sufficiently warm, but not boiling. Serve in soup bowls or cups alone...or with a garnish of roasted chopped pears...the roasted pear vanilla bisque is simply delicious, it really does not need an accompaniment!
