1 cup unsalted butter

2 cups all purpose flour

1/4 cup packed brown sugar

1/2 tsp kosher salt

3/4 cup seedless raspberry jam

2 cups fresh raspberries

4 ounces cream cheese, softened

4 ounces goat cheese or cream cheese

1/2 cup granulated sugar

1 tbsp all purpose flour

1 egg

1 egg yolk

2 tbsp shredded lemon peel

2 tbsp lemon juice

1/2 tsp vanilla

preparation

1.  Preheat oven to 350 degrees F. Use a 13x9x2 inch baking pan with foil, extending the foil over edges of pan.

2.  To make the crust, in a medium bowl beat 1 cup butter with a mixer for 30 seconds.

3.  Beat in the 2 cups flour, brown sugar, and salt. Press mixture evenly on the baking pan and bake for 20 minutes.

4.  Spread jam over the crust and sprinkle with raspberries.

5.  For the filling, beat cream cheese and goat cheese in a large bowl for 30 seconds. Beat in granulated sugar and 1 tbsp flour. Beat in the egg, egg yolk, lemon peel, lemon juice and vanilla until smooth.

6.  Pour filing over raspberries.

7.  Bake for 25-30 minutes. Cover and chill for 2 hours. using the edges of the foil, lift uncut bars out of pan.

8.  Cut into bars and store in refrigerator.
