2/3 cup biga (aetive and sti11 bubbling)

1 1/3 cups water at room temperature

4 cups raisins (or golden raisins)

vegetable oil, for brushing

preparation

1.  Preheat the even to 450°F

2.  Mix the flour, yeast, biga and water in a mixer with the dough hook attachment for 3 to 4 minutes. Let the dough rest for l0 to l5 minutes, then add the salt and raisins.

3.  Mix for another 5 minutes on the second (quicker) speed, The dough should feel wet, sticky and warm after mixing.

4.  Oil a deep container and turn the dough into it without folding it. Leave it for 20 minutes.

5.  Turn out the dough on an oiled work surface. Press it out into a large rectangle and cut in half. Turn each half ever and place on an oiled baking tray. Bake for 40 minutes until golden. Remove from the even and leave to cool en a wire rack.
