Pretzel Dogs

The soft, buttery flavor just melts in your mouth. This recipe makes a large batch. It is great because you can make and eat some now and refrigerate/freeze the rest for another day!

Hotdogs (or sausages)

Pretzel Dough Ingredients:

1-1/2 cups Warm Water

1 tbs Sugar

2 tsp Kosher Salt (reduce the amt if using table salt)

1 package Active Dry Yeast ( 2-1/4 tsp)

4-1/2 cups All-Purpose Flour

2 oz Unsalted Butter, melted

Vegetable Oil (to coat pan)

Baking Soda Bath:

10 cups water

2/3 cups baking soda

Egg Wash:

1 large egg yolk, beaten with 1 Tbs water


Kosher Salt or Pretzel Salt

1.  If using bread maker, combine warm water, sugar, salt, yeast, flour and unsalted butter and set for the dough cycle. Once the cycle is complete, move on to step 7.

2.  If using a mixer, combine warm water, sugar, salt and yeast. Stir and allow to rise for 4-5 minutes.

3.  Once mixture has risen slightly, put flour in the bowl of the mixer, add the yeast slurry, melted butter and using the dough hook, kneed on low until the dough comes together.

4.  Increase speed to medium and kneed until the dough is smooth and pulls away from the sides of the bowl.

5.  Remove dough from the bowl, spray it with nonstick cooking spray, then return the dough back into the bowl. Cover with a clean towel and place in a dark, dry place to rise for 1 hour.

6.  Preheat oven to 450 degrees F. Line baking sheet(s) with parchment paper and brush with the vegetable oil. Set aside.

7.  In a large pot, bring 10 cups water and 2/3 cups baking soda to a boil.

8.  Turn the dough out onto an oiled surface and divide it into small pieces (the size of a golf ball).

9.  Roll each ball into a rope and wrap it around the full length of the hotdog or sausage. Pinch the ends on themselves to prevent them from unwrapping. Or you can shape the dough into a pretzel shape.

10.  One by one, place the pretzels/pretzel dogs into the boiling water for 30 seconds. Using a large spatula remove them from the water and place onto the oiled baking sheet.

11.  Brush on with beaten egg wash and sprinkle with salt.

12.  Place in oven until golden brown in color, about 10-12 minutes.
