Prawns Eggplant Tom Yum

Usually, tom yum is cooked as sour and spicy soup. But today, I cooked tom yum with eggplant and prawns with stir fry system is like balado in Indonesia.

1 big italian eggplant, washed and cut as you like.

10 prawns, peeled.

1/2 medium onion, roughly chopped.

2 cloves garlic, finely chopped.

1 tsp sugar.

Salt is required.

2 tbsp tom yum paste instant.

3 tbsp oil for sauteing.

1.  Preheat oil, stir fry onion, garlic, sugar and salt until fragrant.

2.  Add tom yum paste instant, stir fry until fragrant.

3.  Add prawns and stir until reddish.

4.  Add eggplant, stir until eggplat are tender.

5.  Transfer to serving plate, ready to be served.
