This recipe has become one of my go-to snacks because a) it takes less than 10 minutes to make, b) it’s really delicious and c) it’s incredibly versatile

1 large potato

2 medium tomatoes

1/4 cup diced red onion

1/4 cup fresh cilantro

1 cloves garlic

1/2 tbsp lemon juice

1/2 tbsp lime juice

1/4 tsp salt

1/4 tsp pepper

1/8 tsp cumin

preparation

1.  Preheat oven to 350.

2.  Wash the potatoes, then dry them by dabbing the potatoes with a clean kitchen wipe-or anything that can be used to dry-

3.  With a fork poke holes small holes into the potatoes, this will prevent steam from building up during baking. It also helps heat enter and the potatoes cook faster.

4.  Finely dice tomatoes, red onion, garlic and cilantro. Combine in a large bowl and add lemon juice, lime juice and seasoning.

5.  Alternatively, process all ingredients in a food processor for 30 seconds.
