A tasty main dish based on a classic French pork and potato recipe.

1 pound Pork Tenderloin

2 strips Bacon

2-1/2 cups Sliced Red Potatoes, 1/2 inch thick

1 clove Garlic, minced

1-1/2 cups sliced onion, cut lengthwise

1 tablespoon Olive Oil

1/4 cup Dijon Mustard

1/2 teaspoon Herbs De Provence

2 teaspoons Coarsely ground Black Pepper

1/4 teaspoon salt, or to taste

preparation

1.  Heat oven to 375 degrees. Lightly coat a baking dish with cooking spray. combine the potatoes, onions,1 teaspoon of the black pepper, and garlic in the dish. Add the olive oil and toss to coat.Roast in the oven for 30 minutes.

2.  While the potatoes roast prepare the pork. Lay the bacon strips on a cutting board.Combine the mustard and the Herbs de Provence in a small bowl.Brush some of the mustard mixture on one side of the tenderloin. Lay it across the bacon mustard side down.

3.  Spread the remaining mustard on all the sides of the pork.

4.  Wrap the bacon strips around the pork at a slight diagonal so that most of the pork is covered with bacon. Secure with toothpicks.sprinkle the remaining pepper evenly over all sides of the pork.

5.  Remove the pan from the oven. Place the bacon wrapped pork on top of the potatoes and return the pan to the oven.

6.  Cook to an internal temperature of 145 degrees, approximately 20 - 25 minutes.

7.  Remove from the oven. Transfer the pork to a warm platter and cover loosely with foil. Allow to rest for 10 -15 minutes.

8.  Cut in thick slices and serve with the potatoes and onions.

Cooks' note:
This is a wonderful one pan meal, it just needs a salad or a roasted vegetables of your choice to round out the meal.
