Porcupine Meatballs

My mother in law has made these for years, taught by her mother. Now I carry on the tradition.

2 lbs ground beef

2/3 c instant white rice

2 cans tomato soup

2 cans water

2 eggs, beaten

Salt and Pepper to taste

Oil for browning

1.  In a large bowl mix ground beef, eggs, rice and salt and pepper. Mix well using hands. Form into meatballs, a little smaller than tennis ball size. In a large skillet, heat oil over medium heat. Brown meatballs on all sides. Remove and drain on paper towels. In a large pot over medium heat, combine soup and water. Bring to a boil and then reduce to simmer. Place meatballs in soup mixture and simmer until cooked through, about an hour. Serve w/ tomato soup sauce on top.
