Popcorn Cookies with Caramel Drizzle

From the cookbook of Smitten Kitchen, I bring caramel drizzle to the recipe and give it a sweet and salty experience.

1/2 cup or one stick of softened butter

1/2 cup brown sugar

1/3 cup sugar

1 large egg

1/2 teaspoon vanilla

1 1/4 cup flour

1/2 teaspoon baking soda.

1/2 bag of microwaved popcorn

10 kraft individually wrapped caramels-melted

1 teaspoon water

1.  Preheat oven to 350 degrees.

2.  Beat together butter, sugars, egg, and vanilla until smooth.

3.  Whisk flour and baking soda together.

4.  Stir flour into butter/sugar mixture.

5.  Fold in popcorn.

6.  Roll dough into mounds size of a golf ball.

7.  Bake for 10-12 minutes.

8.  Melt caramel in microwave for 10-15 seconds with 1 teaspoon of water.

9.  Stir until melted and cooled.

10.  Drizzle over cookies with a spoon or fork.

11.  Allow caramel to cool for 10 minutes.

Cooks' note:
Popcorn will go stale after a few days. Store in an airtight container.
