Pizza Meatball Sliders

I decided to throw all the things that you'd find on a pizza and make it a meatball, toss it in some sauce and throw it on a bun, with some extra cheese of course. What you've got is a Pizza Meatball Slider.

1 lb sweet Italian sausage, cases removed (half hot if you’d like)

1/2 stick of pepperoni, minced

1 medium sweet onion, small diced

2 cloves garlic, minced

1 cup sliced mushrooms, diced

1 egg

1/2 cup Italian bread crumbs

1 1/2 teaspoons garlic powder

1 teaspoon onion powder

2 tablespoons salt

1 teaspoon dried parsley flakes

1 teaspoon dried basil

1/2 teaspoon dried oregano

1 teaspoon dried red pepper flakes

1 1/2 cups shredded mozzarella cheese, extra for topping

1/2 cup Parmesan cheese

1 jar marinara sauce

16 slider rolls

1.  In a large bowl mix together the uncased sausage and minced pepperoni (can used a food processor for best results). Place in the refrigerator until needed.

2.  Heat two teaspoons olive oil in a sauté pan, add the onion and let sauté for about 3 minutes. Add the garlic, cook another minute then add the mushrooms and let cook down until moisture from mushrooms is mostly gone. Remove from heat and let cool to room temperature.

3.  In the meantime add the rest of the ingredients except slider rolls into the sausage/pepperoni mixture. Mix well, then add the onions, garlic and mushrooms and mix until combined.

4.  Roll the mixture into medium-large meatballs, about 1 1/2 golf ball-sizes I’d say. You want it big enough to fill the slider roll. In another sauté pan heat an extra teaspoon of olive oil over medium heat. Add the meatballs, a couple at a time, without crowding the pan. Brown on all sides, until cooked through. Repeat until all meatballs are cooked.

5.  In a crock pot, on low, heat the marinara sauce and add the meatballs. Let cook for an hour or so. Assemble with slider bun, meatball and extra sauce & shredded mozzarella on top. The messier the better!
