Pineapple Sour Spicy Head of Fish

This is one of my favorite side dish (Pineapple Sour Spicy Head of Fish). A side dish originated of West Kalimantan - Indonesia. There is sweet, sour and spicy. For me, in this food complete all of flavors.

serves: 2

1 head of big/medium fish (me : head of Salmon).

1 pineapple, sliced thin (1 cm).

1 medium onion.

2 cloves garlic.

1 tbsp dried red chilies paste.

1/2 tsp ground tumeric.

Salt as needed.

2 stalks lemongrass take the white, crashed.

2 tbsp tamarind juice as needed.

2 bay leaves.

2 - 3 lime leaves.

Oil for sauteing.

1 ltr of water.

1.  Puree onions and garlic.

2.  Heat oil, saute onion, garlic, dried red chilies, salt, lemongrass, bay leaves, and lime leaves until fragrat.

3.  Put head of fish into spices and stir well.

4.  Pour water and cook until boiled.

5.  Add pineapples, tamarind juice and boil until cooked.
