A quick yet satisfying dessert that will never leave you feeling guilty. Versatile where as it can be made in a pie or in individual servings. This is a dessert is what I like to call a one pot (or in this case blender) wonder




ingredients

1 can 1lb crushed pineapple in own juice (strained but save juices)

1 tsp vanilla

1 tsp lemon juice

1/2 cup boiling water

2 envelopes unflavored gelatin (such as Knox)

2/3 cup skim milk powder

preparation

1.  Place pineapple, vanilla and lemon juice in blender.

2.  Blend, then add boiling water, Add gelatin and ½ the reserved pineapple juice.

3.  Slowly add the skim milk powder and blend until incorporated.

4.  Pour into custard cups or pie place and refrigerate.

5.  Garnish with some cinnamon.

6.  Chill until set.

Cooks' note:
You can change it up a bit by adding some lemon and/ or orange zest. This recipe can be made into an 8" pie or 6 small individual ramakins
