Peanut butter and Jam cookie sandwiches

This recipe is a classic childhood favorite disguised as a guilty treat and if you use organic protein powder it becomes a healthy protein rich power food. I hope you enjoy it!

1 c peanut butter

1/4 c creamed or raw honey

1/4 c of plain protein powder or dry ingredient of choice- any flour, almond meal, even cocoa powder would work

1 egg

bunches sugar free Jam, I used local Butcher’s

1.  Preheat oven to 275

2.  Blend together peanut butter and honey, make sure its well blended

3.  Mix in egg

4.  Add protein powder or dry ingredient of choice

5.  Mix well

6.  Roll into balls and place on cookie sheet a couple inches apart

7.  Press balls down with the bottom of a jar or cup to flatten

8.  Bake in oven for around 8 minutes until edges are slightly darker brown

9.  Cookies will be soft but firm up as they cool

10.  When cool spread jam on the bottom of one cookie and top with another

11.  Let sit for 5 minutes (if you can resist) to let jam soak into the cookie a bit.

12.  Gobble up!
