Peach Pistachio Cobbler

Wonderful rustic dish with the added crunch of pistachios.

serves: 6-8

3/4 cup sugar

2 tablespoons corn starch

3/4 teaspoon cinnamon (I probably tripled this)

1/4 teaspoon nutmeg ( I probably tripled this)

3/4 teaspoon salt

8-10 peaches, peeled, pitted and sliced ( I would suggest doubling this, it\'s not peachy enough)

2 cups flour

1/2 cup pistachios, shelled and chopped ( I doubled this)

2 teaspoon baking powder

3/4 cup unsalted butter, cut into 1/2 inch cubes (I melted mine, then let it cool a bit)

3/4 cup whole milk

1.  Preheat your oven to 350F.

2.  Grease a 2 quart dish.

3.  For the peach filling, in a small bowl combine 1/2 of the sugar, the cornstarch, 1/2 teaspoon cinnamon, nutmeg and 1/4 teaspoon salt.

4.  Place the peaches in a large bowl and pour the sugar mixture over them. Toss to coat properly.

5.  Pour the peach mixture in your prepared dish. Set aside.

6.  For the topping, use a large bowl and combine the flour, pistachios, the remaining 1/4 cup of sugar, 1/2 teaspoon of salt, and the baking powder.

7.  Using a pastry blender or fork or even your hands, cut the butter into the mixture. It should look like coarse cornmeal now.

8.  Now add your milk, mix with a fork only until it comes together. Do not overmix.

9.  Pinch off chunks of the topping and drop over you peach mixture.

10.  Combine remaining cinnamon and sugar and sprinkle over the top.

11.  Bake for 45 to 60 minutes. Top should be golden and peaches bubbling when done.

12.  Serve with a smile.

Cooks' note:
If you're like me and love your cinnamon and/or nutmeg feel free to add extra to each step. I sprinkle it over the peach mixture once it's in dish. I add extra to both the peach mixture and topping. I also sprinkle extra over the top before baking.
You could switch the pistachios to a walnut or pecan if you like. It just adds a nice extra crunch to this. Also feel free to add more peaches if you like your ratio of peach to dough different.
