Peach Granola Crisp

This is a quick & easy dessert for all you peach lovers! Granola adds great crunch to the peaches, & I like the flavor of the raisins in this dessert. Any granola will work, but my favorite granola is Janetta’s Homemade Granola! Made by one of my dearest friends, Janetta’s Homemade Granola is not so sweet & has great crunch! We served the crisp with Black Cherry Chocolate Chip Ice Cream, which is a weird, but delicious combination! The ice cream flavor works well with both the granola topping & the warm peaches! You should try it!

serves: 6-8

4 cups peeled, sliced peaches (6-8 peaches, depending on size)

1/2 cup King Arthur Flour Signature Secrets

1/2 cup sugar

1 teaspoon ground cinnamon

1 tablespoon peach schnapps

1 tablespoon triple sec

nonstick cooking spray

Granola Topping

3 cups granola

1 stick unsalted butter, melted

cup ½-1 dark brown sugar, depending on the sweetness of the granola

1.  Preheat your oven to 350˚.

2.  Peeling the peaches is very the fruit in a bowl of boiling water for about 5 minutes. Pour out the water. Using a knife...or your fingers...peel away the peach skin.

3.  Slice the peaches into a measuring cup so you know how much you have, then into a bowl for mixing with the other ingredients.

4.  Add the King Arthur Flour Signature Secrets, the sugar, cinnamon, peach schnapps & triple sec. Mix well to combine.

5.  Spray a 2-3 quart baking dish with nonstick cooking spray. Transfer the peach mixture to the baking dish.

6.  In a separate bowl, mix together the granola, melted butter & brown sugar. When adding the brown sugar, start with a ½ cup brown sugar...taste...add more, according to the level of sweetness of the granola (a). Cover the peach mixture with the granola mixture (b).

7.  Bake the crisp for 45 minutes.

8.  Serve warm or at room temperature with your favorite ice cream or whipped cream.

My new favorite "find" is King Arthur Flour's Signature Secrets! I bought a jar of this a while back, and it is really great! This all-purpose starch quickly dissolves & thickens without worked really well in this recipe. I hope you will try it & share your comments with me...
