Passion Fruit Meringue Tart

This tart is filled with passion fruit curd and topped with meringue stars. The curd base can also be used for berries and other fruits - just skip the meringue and arrange the fruit over the curd.

734 grams dough (sweetened basic pie and tart pastry dough)

3 cups passion fruit curd

3/4 cup brown butter

4 egg whites

1/4 pinch of cream of tartar (if not using a copper bowl)

2/3 cup sugar

1.  Fill a probaked tart shell with the fruit curd and pipe meringue stars onto the curd using a pastry bag.

2.  Quickly brown the tips of the meringue under the broiler.

Cooks' note:
Use a 9 1/2-inch tart ring or fluted tart pan. Roll the dough 2 inches larger than the ring or pan and line the pan with it. Prebake the tart shell. Beat the mixture slightly to loosen it and then beat in the brown butter. Spread the mixture in the tart shell.
In a bowl or a stand mixer, combine the egg whites with the cream of tartar (if using) and beat until medium peaks form. Add the sugar and continue beating until stiff peaks form.
