Paleo Apple Harvest Pancakes

These Paleo Apple Harvest Pancakes are the most perfect fall breakfast! Not only are they gluten-free, dairy-free and grain-free, but they are made with hidden veggies that make them super moist and delicious!

1/2 cup coconut flour

1 tsp baking powder

1/4 tsp cinnamon

1 cup grated apple (I used golden delicious)

1/2 cup grated carrot

1/2 cup grated zucchini

2 eggs, beaten

3 egg whites, beaten,

1 1/4 cup non-dairy milk

1 tbsp honey or maple syrup

1/4 tsp pure vanilla extract

1.  In a large bowl combine coconut flour, baking powder and cinnamon

2.  In a separate bowl, mix together grated apple, carrot and zucchini

3.  In a separate bowl, whisk together, eggs, egg whites, milk, honey and vanilla. Add to dry mixture and mix well.

4.  Add in grated mixture and stir well to combine.

5.  Grease a skillet with coconut oil/cooking spray and place on low heat . Once pan is extremely hot, using a measuring cup pour 1/4 cup of the batter and then cover the pan. Once bubbles appear and the edges go brown, remove cover, flip the pancakes and cover again for approximately 1 minute. Repeat until all the batter is used up.
