Palak Paneer

bunch of Spinach

A slab of Paneer ( Approx 14- 16 cubes)

1 cup Cilantro

1 inch piece of Ginger

4 cloves of Garlic

1 - 2 Green Chillies (as per your spice preference)

1/2 inch Cinnamon stick

1 Green Cardamom

2 cloves

1 tsp Cumin Seeds

1 medium Onion, Chopped

Salt as per taste

Sugar as per taste

1/2 tsp Turmeric Powder

1 tsp Kasoori Methi

1 tsp Garam Masala Powder

2 tsp Thick Whisked Yogurt

1 tbsp Thick Cream

1 tbsp Oil

1.  Method:

2.  Clean Spinach. Separate the leaves from the stem and wash thoroughly with water

3.  In a mixer grinder, add spinach, cilantro,green chillies, ginger, garlic, cinnamon, cardamom,cloves and grind to a smooth paste with little water.

4.  In a pan, add oil and cumin seeds. When the cumin seeds splutter, add chopped onion.

5.  Fry onion till its mushy and cooked well.

6.  Add the spinach paste to it and cook for some time.

7.  Add salt, sugar,turmeric powder, kasoori methi, garam masala powder.

8.  Add paneer cubes to this and cook well. Add little bit of water to make the gravy if the consistency is too thick.

9.  Add yogurt. Mix once and turn off the gas.

10.  Garnish with cream and serve hot with Naan,Kulcha,Kerala Paratha or rice.

Cooks' note:

You can adjust spices as per your choice.
If you want Paneer cubes to be fried initially before adding to gravy then you can do so.
If you want a tangier version then squeeze in a lime.
For me adding a bit of sugar gives a nice taste to this dish. If you do not wish to add sugar then you can skip this.
