Orange Almond Muffins

I, for one, can only imagine this combination around the Holidays. Is that weird? Maybe it's not, but I just can't picture eating an Orange Almond muffin in July. Anyway, it is the perfect combination for December, and wouldn't this be a great addition to Christmas morning? Make them ahead, give some out to your friends and then have some handy for present opening.

1 cup sugar

4 large eggs, at room temperature

1/2 cup fresh orange juice, at room temperature

1/4 cup olive oil

1/4 cup plain whole milk Greek yogurt, at room temperature

1 teaspoon vanilla extract

1 teaspoon almond extract

1 large orange zest

2 1/4 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup sliced almonds-toasted

More almonds for the top

1.  Preheat oven to 325F degrees. Line 18 muffin cups with paper liners, spray with nonstick cooking spray. In a mixer beat the sugar and eggs together until pale and thick, about 2 minutes. Beat in the orange juice, olive oil, yogurt, vanilla extract, almond extract and orange zest.

2.  In a separate bowl, whisk together the flours, baking powder and salt.

3.  In batches, stir the dry ingredients into the wet ingredients until just blended. Stir in the almonds. Fill the cups with batter, 1/3 of the way full. Top with almonds. Bake until golden on top and a tester inserted in the center comes out clean, about 20 minutes.
