Open Faced Meatloaf

This is definitely an old southern favorite of mine!

Texas Toast Bread

4 Medium-Large Potatoes

1/4 cup Milk

1/2 stick Butter

2 lbs Ground Beef

1/2 cup Bread Crumbs / Crackers

1 tbsp Dry Mustard

1 tbsp Honey

1 tsp Black Pepper

1 package Brown Gravy Mix

1.  Make the meatloaf:

2.  Preheat oven to 350 degrees.

3.  Mix ground beef, bread crumbs, dry mustard, honey, and black pepper in a bowl.

4.  Shape the mixture into a log shape. DO NOT PACK TIGHTLY. That's what causes dry meatloaf!

5.  Bake for 45 minutes.

6.  Make the mashed potatoes:

7.  Add peeled potatoes to a large pot and add enough water to cover them. Salt the water liberally and bring the water to a boil.

8.  When the potatoes are tender (15-20 minutes), drain well and add them to a mixing bowl. Whip until smooth. Add milk and butter.

9.  Make the brown gravy:

10.  Follow package directions

11.  Make the open face:

12.  Place 2 pieces (per plate) of (plain, un-toasted) Texas Toast to a plate

13.  Smother with mashed potates

14.  Add a slice (or two) of meatloaf on top of potatoes

15.  Cover with brown gravy
