Okra Salad

Okra has a mild flavor and a somewhat unusual texture. One of the best ways to prepare this vegetable is to steam and dress it with a tangy and spicy sauce.

8 oz okra, trimmed

1/2 cup dried shrimp, washed and soaked

2 tbsp canola oil

2 tbsp lime juice

2 tsp garlic chili sauce

2 tsp soy sauce

1.  Drain dried shrimp and chop coarsely.

2.  Heat oil in pan. Add dried shrimp and cook for about 3 minutes. Remove together with the oil into a small bowl.

3.  Add lime juice, garlic chili sauce, and soy sauce. Stir to combine.

4.  Steam okra for about 5 minutes. When pierced with a fork, it should be tender.

5.  Remove and place on a plate. Spoon shrimp mixture onto okra. Serve immediately.
