Oatmeal Cookies with Coffee Icing

Take a classic oatmeal cookie and improve it with a sweet coffee icing!

2 sticks (1 cup) butter, softened

1 3/4 cup granulated sugar

2 eggs

1 1/2 tablespoons honey

2 teaspoons vanilla

2 1/4 cup all-purpose flour

2 teaspoons cinnamon

1 1/2 teaspoons baking soda

1/2 teaspoon salt

2 cups quick-cooking oats (not instant or old-fashioned)

1 1/2 cups powdered sugar

2 tablespoons black coffee

1.  Preheat oven to 350F.

2.  Spray a cooking sheet and set aside.

3.  Whip the butter with your mixer until it's smooth.

4.  Stir in the sugar and mix well.

5.  Stir in vanilla, honey and eggs and mix well.

6.  Sift together flour, cinnamon and baking powder in a separate bow.

7.  Add the sifted ingredients to the butter mixture.

8.  Stir in oats.

9.  Drop the dough onto a cookie sheet by teaspoonfuls (or more if you like a big cookie like I do.) Bake for 6-8 minutes.

10.  For the icing:

11.  Mix 1 1/2 cups powdered sugar with 2 tablespoons black coffee and mix until smooth.

12.  You may need to add more liquid to make glaze spreadable.

Cooks' note:
These can be made into big cookies or little bite sized ones!
