My Med Veg Mash Up!

I love it when a plan comes together. I had to use up some veg in my fridge so I came up with this lovely mix up, I added some Mediterranean herbs to add flavour.

1 in x Orange Pepper - Roasted and cut half

2 x Carrots

Handful Broccoli (approx 50g)

30g Green Beans - chopped

2 tbsp Tomato Passata

1 tsp basil

1tsp oregano

1 tsp spiced crushed red pepper

1.  Pre-heat oven to 220 deg. Cut pepper in half and spray with oil, place in a foil lined baking tin and bake in oven for 20 minutes.

2.  Cook vegetables either boil or steam, I always steam as it's healthier and much more tastier.

3.  Once vegetables are cooked, place in a food processor or blender with the passata and herbs n spices until mix through.

4.  Once peppers are ready remove from oven and fill with the veg mix. Serve. Yummy!

Cooks' note:
Of course you can use any vegetable mix and any herbs or spice mix to tailor to your own taste.
