Mushroom Jalousie

by:

A jalousie - a window with slatted blinds - presumably gets its name for its ability to protect those inside from the inquiring eyes of jealous lovers. In any case, its easy to see the resemblance to this pastry which has slats on top that allow a peek at what is inside. A classic jalousie has a filling of almond paste covered with jam, but it is one of those versatile pastries that you can fill with just about anything sweet (such as cooked fruit) or savory (such as foie gras, pâté, seafood, cooked chopped vegetables) qui. Whatever filling you decide on should not release liquid as it bakes, which would make the jalousies bottom crust soggy.
