Mushroom Chicken Legs

This is a quick and easy dinner idea - braised chicken with mushroom sauce.

2 chicken legs, cut into thighs and drumsticks, or 2 drumsticks and 2 thighs

1/2 lb mushrooms, quartered

2 tbsp chopped garlic

1 medium onion, quartered

1/2 bunch cilantro

1/2 cup tomato sauce

salt to taste

black pepper to taste

olive oil for cooking

1.  Heat olive oil in a large skillet over high heat. Add salt and pepper to chicken and add to the skillet, skin side down. Cook chicken for 10 minutes on each side. Remove the chicken from skillet.

2.  Turn the heat down to medium. To the skillet add quartered mushrooms and leave undisturbed for 2-3 minutes, until browned on the bottom.

3.  In a food processor puree onions and cilantro. Add garlic and cilantro paste to the skillet and stir. Cook for 2 minutes.

4.  Stir in the tomato sauce. Add chicken to the skillet, cover and cook for 15-20 minutes, until the chicken is cooked through.
