Mozzarella Stuffed Bacon Wrapped Meatloaf

I'm pretty sure this is my third meatloaf recipe. And I'm pretty sure I say in every post about meatloaf that it's my all-time favorite meal. This meatloaf is stuffed with mozzarella cheese and wrapped in bacon! It may not top the charts when it comes to how it looks, but the taste if off the charts.

serves: 5-6

1 lb ground beef

1 egg

1/3 cup breadcrumbs

salt, pepper, and smoked paprika, to taste

4 oz bacon slices

2 oz mozzarella cheese, chopped

1/4 cup barbecue sauce

1.  Preheat oven to 350 degrees

2.  Mix ground beef, eggs, breadcrumbs, and spices in a large bowl

3.  Line a 9x5 loaf pan first with parchment paper and then with 2/3 of the bacon, leaving an overhang

4.  Shape a long log with 2/3 of the meat mixture and fit it inside the loaf pan. Make a groove in the middle and add the mozzarella to it. Cover with the remaining meat mixture. Fold the bacon overhang on top and cover entirely with the remaining 1/3 of bacon. Spread with half of the barbecue sauce.

5.  Bake in the middle of the oven for 40 minutes. Spread the other half of the barbecue sauce on top and bake another 20 minutes.
