48 large mussels (cleaned)

1/4 cup water

1 large garlic clove (halved)

1 large shallot (halved)

leaves Handful of flat-leaf parsley

1/4 Pared zest of lemon

1/2 cup (100 g) unsalted butter (softened)

1 2/3 cups (75 g) fresh white breadcrumbs

Salt and freshly ground black pepper

1.  Put the mussels and water into a large pan, cover, and place over a high heat for 3 to 4 minutes, shaking the pan now and then, until the mussels have just opened.

2.  Drain the mussels in a colander, then break off and discard the empty half-shells, leaving the mussels in the other shell.

3.  Preheat the broiler. Mince the garlic, shallot, parsley, and lemon zest together-it you have one of those mini food processors, it will do the job beautitully and easily. Mix with the softened butter in a bowl and season to taste.

4.  Dot each mussel with some of the garlic and parsley butter, then sprinkle with some of the breadcrumbs. Arrange them in one layer on a baking pan and broil, close to the heat, for 2 to 3 minutes, or until they are crisp and golden brown. Serve immediately.
