Mixed Vegetable Pilaf/Pulav with Soy Chunks

Soy chunks: are you ordering what these are? Well these are the dried nuggets made out of soy. They are very spongy in texture when cooked that is why they absorb a lot of flavor. They have a very meaty bite. Perfect meat for vegetarians. Do give it a try. Can be cooked with rice, in curry. Full of good protein.

serves: 5-6

2 cups Basmati Rice:

1 tbsp Ghee or olive/canola oil : full

1 tsp Cumin seeds :

2 leaf Bay (dried) : small

stick Cinnamon : 1inch pc

4 whole Cloves :

4 Black pepper corns :

1-2 tsp Garam masala -

2-3 tsp Salt -

1 tbsp Garlic (chopped finely) :

1 big Onion (sliced and cut in halves) :

1/2 cup Soy nuggets :

tbsp Cashews (halved) :1

1/2 tbsp Raisins :

2 cups Mix veg (frozen) :

Water : 2&1/4 to 2&1/2 cups.

1.  Take rice in a bowl. Wash it and soak in water till we are ready to cook. It makes the cooking quick.

2.  Collect all the ingredients. Chop the onions and garlic as mentioned above.

3.  Heat up the Ghee or oil. Add cumin seeds, cinnamon, cloves, black pepper corns, bay leaf to the hot ghee.

4.  From this point, keep the heat slightly less than medium. It is a delicate dish. Don't want to burn it.

5.  Add garlic and onions and sauté till slightly red. Lower the heat between slow and medium flame.

6.  Slide the onions to the side of the cooking pan. Add soy chunks and cashews and sauté in the little oil at the bottom of the pan.

7.  Now add frozen mix vegetables.

8.  Drain the water out of rice and add the soaked rice to it.

9.  Now add 2&1/2 cups of water to it. Cover it. Let it simmer on low heat for about 15 minutes or till the water dries up. Do not open it. Do not stir it while cooking.

10.  When the water dries up, remove it from the flame. Do not open the lid yet. Give another 10 minutes.

11.  Use a fork and fluff it lightly.

12.  Dish it in a beautiful plate and enjoy

Cooks' note:
Cooking with Basmati Rice requires it to handle it gently and cook at low flame.

Tip for fluffed Rice : never stir it while cooking.
Always Cook covered.
Never touch it hot. Let it sit for 5-8 minutes in open pan, before forking it.
