A simple, julienned cucumber salad with the healing benefits of miso.

1 tablespoon organic brown miso

1 tablespoon rice vinegar

1/4 tablespoon honey

1/2 tablespoon toasted sesame oil

1/2 teaspoons red pepper flakes

1 teaspoon sesame seeds

1/2 tablespoon hot water

1.  Cut ends of cucumber, and julienne cucumber lengthwise. Set aside.

2.  2.In a medium bowl, combine miso, rice vinegar, sesame oil, honey, red pepper flakes, sesame seeds and hot water. Whisk until well combined

3.  Toss cucumbers into bowl, and refrigerate for 15 minutes to allow for flavors to meld.

4.  Serve and enjoy!
